Ingredients
- 1 lb shrimp, shelled
- 1/4 cup olive oil
- 1 clove garlic, minced
- 3 tomatoes, chopped fine
- 1/2 jalapeno pepper, chopped fine
- 2 tbsp pesto
- 1 tbsp finely chopped parsley
- 1/4 cup Feta cheese, crumbled
- Salt & pepper, to taste

Preparation
Step 1
Wash the shrimp and pat dry. Heat oil in frying pan, add the garlic and saute for a few minutes.
Add the tomatoes and jalapeno. and cook until soft. Add the pesto and parsley and mix well. Add the shrimp and cook for a few minutes.
When the shrimp are cooked, add the feta cheese, then cook for 1-2 minutes longer.
