Ingredients
- 1 (6 oz.) pkg cornbread stuffing mix
- 1/2 cup melted butter
- 2 lbs. zucchini, grated
- 1/2 tsp. salt
- 1 cup diced carrots
- 1 cup diced onions
- 1 (8 oz.) carton sour cream
- 1 cup grated cheddar cheese
- 1 (10 3/4 oz.) can cream of chicken soup

Preparation
Step 1
Combine stuffing mix and butter. Line 2-3 qt. casserole dish with half of stuffing mixture. In medium saucepan combine zucchini, salt, carrots and onion, cover with water, bring to boil and simmer 5 min. Mix together sour cream, cheese, if desired and soup.Add to zucchini mixture. Place over stuffing mixture and top with remaining stuffing mixture. Bake in 350 degree oven, 45 min. or until heated through.
