Ingredients
- 10 eggs
- 1/2 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 16 oz small curd cottage cheese
- 16 oz Monterey Jack cheese, shredded
- 1/2 c melted butter
- 4 oz chopped green chilies

Preparation
Step 1
Beat eggs until light and lemon colored--add flour, baking powder, salt, cottage cheese, Jack cheese, and melted butter. Blend smoothly and add chilies.
Pour into buttered 9x13 casserole dish. Bake at 350 degrees for 35
minutes or until center appears firm.
Cut into squares and serve hot.
Note: This recipe was beautifully served by Sharida’s cheerleader sponsor at a brunch for the cheerleaders, Sharida’s senior year. I have used it many times since, and it is always a big hit. It’s great for brunch or lunch, with fresh fruit and muffins.
Freezes well after baking, and is wonderful left-over.
