HAM & CHEESE STRATA

I have been making this strata for awhile, and have played around with the ingredients until it became a requested item. It’s great for brunch or lunch and can be made ahead and baked at the last minute.

Ingredients
- 6 Eggs (can use Egg Beaters for part or all)
- 1/2 Cup milk
- Italian bread cut into 1 1/2” cubes
- Freshly ground pepper
- 8 oz. mozzarella cheese, shredded
- 8 oz. sharp cheddar cheese, shredded
- 4 Green onions, chopped
- 2/3 Cup rinsed and drained roasted red peppers, diced
- 1/2 lb. sliced ham, cut into 1/2” squares

Step 1
Preheat oven to 350 degrees. Grease 9x13 glass baking pan. Beat eggs and milk in shallow dish. Soak bread in egg mixture for about 5 minutes, stirring to coat all bread
cubes. (Bread should be soaked. If necessary toss in an additional egg or two, along with a little milk). Arrange half of soaked bread in pan. Season with pepper. Add half of each cheese, sprinkle with half of green onion and half of peppers. Cover with diced ham. Top with remaining cheeses, onions and peppers. Cover with remaining bread and pour any remaining egg mixture over. Season with pepper. Bake until brown and cheese bubbles, about 40 minutes. Let cool and set about 5 minutes before serving.
