CHICKEN A LA KING

When I was pregnant with Anthony, three of my good friends at work were also expecting. Jane was due first, and after she left work she invited me over for lunch. Being that we were both very pregnant, she made a huge lunch for us both. This was actually the first time I had Chicken A La King that wasn’t from the frozen food aisle in the grocery store. It’s so much better than frozen.

Ingredients
- 1/4 Cup melted butter
- 3 Tbs. flour
- 1 Cup chicken broth
- 1 Cup milk
- 1 Tsp. Salt
- 2 Cups diced cooked chicken
- 1 3oz. can sliced mushrooms, drained
- 1/2 Cup chopped green peppers (cooked)
- 1/4 Cup chopped pimento
- 1 Can water chestnuts (sliced)

Preparation
Step 1
In medium saucepan, blend melted butter with flour, and add chicken broth slowly and then milk. Cook, stirring constantly, over low heat, until sauce is thick.
Add above ingredients to sauce and heat thoroughly. Serve over hot toast points.
This supposedly makes 5 servings. Jane & I ate it all.
