Ingredients

  • 1 (8 oz) package shredded Monterey jack cheese
  • 1/4 cup chopped canned green chilies (mild), drained
  • 2 Jalapeno peppers, canned
  • 24 wonton wrappers
  • 1 cup prepared guacamole dip
  • Vegetable oil for frying

Preparation

Step 1

1. Line baking sheet with paper towels. Cut peppers into thin wheels. In medium mixing bowl, stir together cheese, chilies and jalapeños with fork until just slightly lumpy but well mixed.

2. Working with several wonton skins at once, put 2 tsp of cheese mixture in center of each wonton. Dampen 2 adjoining edges of wonton wrapper using finger dipped in cold water. Bring opposite dry edges to moist edges and press to form triangle.

3. In large skillet over medium, heat 1/2 inch vegetable oil. Add several wontons at once to skillet, but do not crowd. Cook until golden, about 20 seconds, turn and cook other side for about 20 seconds. Remove to prepared baking sheet using slotted spoon.

4. Place guacamole in small bowl on platter and surround with cooked wantons. Serve immediately.
