In the “olden days” Grandma Calabrese and the Great Aunts made Spingi for the Christmas Eve festivities. They are like little fried donuts, light as a feather and sprinkled with powdered sugar. You would usually burn you mouth on them because you couldn’t wait until they cooled down enough. The recipe was actually written down for me by Mom Calabrese years ago. Here it is, exactly.

Ingredients
- 4 Eggs
- 1 Cup milk
- 1/2 Pkg. Dry yeast
- 1/3 Cup sugar
- Flour according to consistency

Step 1
Mix and let raise to double; one hour or more. Drop by spoonful in hot oil. Cool and cover with powdered sugar.
