DEVILLED EGGS

If you haven’t made devilled eggs, you might think that it’s just the egg yolk mixed with mayo. Wrong. Some people may do it that way, but my Mom didn’t. I found this out the hard way, the way I did many other recipe secrets

Ingredients
- 6 Eggs, hard boiled (Here is a tip. Start with cold water, heat water and eggs slowly, bring to a boil, cover and remove from heat. In ten minutes, the eggs will be perfect)
- Mayonnaise
- Dry Mustard
- Sweet Relish
- Salt
- Pepper

Step 1
Cut eggs in half lengthwise. Remove yolks. Doing one or two at a time, press the yolks through a strainer with the back of a spoon. This makes the yolks very fluffy. Add just enough mayo to moisten, a little dry mustard, a little sweet relish, and salt & pepper. Taste and adjust.
Spoon yolk mixture lightly into eggs, sprinkle with paprika and chill.
