Ingredients

  • 1/2 cup - 125 ml butter or margarine or oil
  • 1 cup - 250 ml brown sugar
  • 2 eggs
  • 1 cup - 250 ml mashed ripe bananas (3 medium)
  • 1 3/4 cup - 425 ml all purpose flour
  • 1 tsp - 5 ml baking soda
  • 1/2 tsp - 2 ml baking powder
  • 1/2 tsp - 2 ml salt
  • Chopped walnuts - optional (I add poppy seeds, sunflower seeds & flax seeds)

Preparation

Step 1

Cream butter and sugar together
Beat in eggs one at a time, beating until smooth
Add mashed bananas and blend in

In second bowl
Stir flour with baking soda, baking powder, salt and nuts.
Add to banana mixture stirring only to moisten.
Transfer to 9 x 5 inch (23 x 12 x 7 cm) loaf pan or 2 small pans.
Bake in 350F (180 C) oven for about 1 hr until inserted toothpick comes out clean.
Let stand 10 minutes
Remove from pan and place on cake rack to cool.

Srap to store

Banana chip bread: Add 3/4 cup (175 ml) semi-sweet chocolate chips.
