Ingredients
- 3 pounds red cabbage, cored and shredded
- 1 can beef stock
- 1/2 cup firmly packed brown sugar
- 1/2 cup cider vinegar
- 4 tablespoons butter, 1/2 stick
- 1/4 tablespoon fresh ground black pepper
- salt to taste

Step 1
Combine all the inpredients, except the salt, in a 10- to 12- quart stainless-steel pot. Bring to a boil, stir, cover, and simmer over low heat, stirring occasionally, 1 hour and 15 minutes. Add salt to taste.
