Creamy Spinach Dip
Weary of the same old onion dip? This tasty dip gets texture and flavor from spinach, Parmesan, sundried tomatoes, and green onions, with reduced-fat mayo and sour cream, it’s healthy, too!

Ingredients
- 1 cup reduced-fat mayonnaise
- 1 cup reduced-fat sour cream
- 1 (10 oz) package frozen chopped spinach, thawed & squeezed dry
- 1/4 cup grated Parmesan cheese
- 2 green onions (green part only), finely chopped
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 4 oil-packed sun-dried tomato halves, finely chopped

Step 1
1. In large mixing bowl, combine mayonnaise and sour cream until smooth.
2. Stir in spinach, Parmesan, green onions, garlic powder and salt.
3. Gently stir in sun-dried tomatoes last so dip does not change color, reserving a few tomato pieces to garnish top.
Note: To make cabbage "serving bowl," take a medium purple cabbage and discard any wilted outer leaves. Trim off root end to level. Using a sharp knife, cut l inch off top of cabbage. Hollow out center, leaving a shell 1/4-inch thick. Fill with dip.
