Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups mixed mushrooms
  • Extra-virgin olive oil
  • 1 - 11 inch pizza crust (such as PC Original Splendido Italian-Style Flatbread)
  • Garlic flavoured olive oil
  • 3 tbsp. roasted garlic pasta sauce (mild or spicy)
  • 1/3 cup crumbled Gorgonzola cheese
  • Salt and freshly ground pepper

Preparation

Step 1

1. On a greased grill over medium-high heat, grill the chicken for 5-7 minutes per side or until cooked through. Cut into thin strips
2. Clean the mushrooms with a damp cloth. Brush with the extra-virgin olive oil. Place on grill and cook until tender and lightly charred, about 8-10 minutes, turning halfway through. Slice thin.
3. Brush the pizza crust with the garlic oil. Place top side down on the grill and cook for a few minutes until golden brown.
4. Spread the pasta sauce over the crust and top with the chicken and mushrooms. Add the gorgonzola cheese.
5. Return the pizza to the grill and cook until the bottom is lightly toasted. Turn off the heat and cook with the lid down until the cheese is melted. Season with salt and freshly ground pepper to taste.
