Chocolate-Haystack Cookie

Ingredients

• 1 cup freshly milled whole wheat flour
• 1/2 tsp baking soda
• 1/2 tsp sea salt
• 1/2 cup cocoa powder
• 1/2 lb butter
• 2 cups semi sweet chocolate chips
• 6 eggs
• 2 1/2 cups sucanat with honey
• 1 1/2 tsp vanilla
• 1 tblsp almond extract
• 6 cups coconut

Preparation

Step 1

In a mixing bowl, combine flour, baking soda, salt, and cocoa. Set aside.

In a separate bowl, melt together butter and chocolate chips and set aside.

In a large bowl, combine eggs, sucanat with honey, vanilla, almond extract, and coconut. Add melted butter and chocolate chips. mix in dry ingredients. Spoon onto greased baking tray. Bake in 1 350 degree oven for 12 to 15 minutes.
