  • 1/2 Cup Old-Fashioned Oats
  • – 1/4 Cup Peanut Butter
  • – 1 Cup Chopped Spinach
  • – 1 Cup Pumpkin Puree
  • – 3 Cups Oat Flour
  • – 1 Zuchhini
  • – 1 Carrot

Preparation

Step 1

The first thing you need to do is cut your veggies down to size, give them a rough chop so they are small enough to fit into your food processor.

Process them down to a pulp, stir to combine, and set aside.

In a large mixing bowl, combine the peanut butter, pumpkin puree, and eggs.

Add the oats and the oat flour, mixing well to form a dough.

On a floured surface, flatten your dough and then add in that awesome chopped veggie salad we made earlier.

Now for the fun part! Get in there! Get your hands dirty! Mash and squish until you form a messy but delicious veggie loaf dough.

Press the dough into a silicone mold or roll it out and cut with cookie cutters and bake at 350° for 25 minutes, or until golden brown.

Allow to cool fully.
