Beef in Red Wine

Ingredients
- 2 lbs Stewing Beef cut into cubes
- 2 Cups Red Wine
- 3 tbsp olive oil
- 2 Cups Beef Stock
- 2 Garlics
- 4 shallots chopped
- 3 1/2 tbsp butter
- 2 carrots chopped
- 2 Tbsp Tomato Paste
- 1/4 tsp ground thyme: & 1 Bay Leaf
- Fresh Parsley

Preparation
Step 1
Preheat oven to 300F ( 150 Degrees C )
Place wine in pan on high heat: Boil till reduced by 2 thirds:
( slightly syrupy )
Dry beef in paper towels & season with salt & pepper.
Heat 2 tbsp oil on high heat: Saute meat in hot oil until brown : remove to plate
Pour out all fat to 2 tbsp: Reduce heat to medium & add carrots & onions :
Saute for a few minutes;
Stir in red wine & stock
Add tomato paste Bay Leaf & Thyme:
Bring To Simmer: Return meat to pan :
Pour everything into the big white dish with lid & cover with lid:
Set in lower part of oven & Cook appx 2 1/2 –3 hours depending on doneness of meat.
Put the garlics into a pan and cover with water: Boil x 3 mins till soft: remove them and take off the peel and skins :
Heat butter on med heat in a small pan: Add garlic: cook x 1 minute:
Cover reduce heat & cook x 10 mins
Add garlics to meat mixture: Garnish with fresh parsley.
