Ingredients

  • 1 lb. dry pinto beans
  • 1 3 lb. pork roast
  • 7 c. water
  • 1/2 c. chopped onion
  • 1 T. salt
  • 2 T. chili powder
  • 1 T ground cumin
  • 1 t. oregano
  • 4 oz. green chilies
  • 2 oz. diced pimento
  • Tortilla chips

Preparation

Step 1

Place roast in crockpot with water. Cook for 8 hours on low. Save the water and roast seperately in refrigerator.
The next day, place beans (soak overnight), water, onion, garlic, roast, seasonings, chilies and pimentoes in crock pot. Cook on low for 8 hours. Serve over chips with garnishments for tacos.
