Ingredients

  • 1 9" unbaked pie crust
  • 3 choppd scallions - white & lite green parts
  • 1 T. canola oil
  • 1 cup sliced mushrooms
  • 1 10oz box frozen chopped spinach, thawed & drained
  • 4 eggs
  • 2 cups 1/2 & 1/2
  • 12 tp. salt
  • 1/4 tsp. black pepper
  • 1 cup shredded Swiss cheese

Step 1

1. Preheat oven to 425.
2.Prick crust with fork and bake for 10 min..or till golden brown. If crust bubbles gently press down with a spoon.
3.in medium skillet, cook scallions in oil for 5 min.. Add muxhrooms & cook 2 min. Set asided.
4.In large bowl,beat eggs with 1/2 & 1/2,salt & pepper. Spoon spinach mixture into pie crust. Sprinkle with cheese. Pour egg mixture over cheese.
5.Reduce heat to 325. Bake for 50 minutes or till knife inserted into center of tart comes out clean.
