Ingredients
- 1 3/4 lb. venison, ground
- 1 3/4 lb. pork, ground
- 6 t. Tenderquick
- 1 1/2 t. ground black pepper
- 2 1/4 t. salt
- 1 1/2 t. cayenne
- 4 1/4 t. light brown sugar
- 1 1/2 t. Louisiana hot sauce, or more per taste
- 1 1/2 t. paprika
- 2 1/4 t. Worcestershire sauce
- 2-3 cloves garlic, finely minced, to taste
- 2 green onions, chopped finely

Step 1
Mix well. Shape into logs. Approx. 2 in. in diameter. Wrap in foil and refrigerate for 24 hours. Remove from refrigerator and bring to room temperature.
Poke holes in foil to allow fat to escape. Bake at 350 for 1 to 1 ½ hours turning every 15 minutes, until it reaches an internal temperature of 160 degrees.
