Ingredients

  • 1/2 cup dried white beans
  • 2 pkg frozen peas
  • 4 qts water
  • 1 ham bone
  • 2 1/2 cups chopped onions
  • 1 cup chopped celery
  • 3 med. potatoes, pared, cut in half
  • 2 carrots, pared
  • 1/2 cup fresh parsley
  • 1/2 lb. ham, cut into cubes
  • 1 tsp. dried thyme leaves
  • 1/2 tsp. chili powder
  • BV to taste
  • 1 c. tomato sauce lg.
  • 1 lb. fully cooked smoked polish sausage, sliced
  • salt
  • pepper

Preparation

Step 1

1. soak beans in water to cover in small bowl overnight. Drain; reserve

2.Heat peas, 4 qts. water, ham bone, onions, celery, potatoes, carrots and parsley in dutch oven to boiling. Reduce heat, simmer uncovered, stirring occasionally, until thickened, about 4 hrs.

3. Stir reserved beans, the ham, thyme and chili powder into soup. Simmer uncovered 1 hour. Add sausage; simmer until hot. Season to taste with salt and pepper.
