Ingredients
- 2 cloves garlic, chopped (original recipe calls for 5)
- 4 anchovy filets
- 3 egg yolks
- 1 teaspoon Dijon
- 1/4 teaspoon freshly ground pepper
- 1/2 teaspoon Maggi or Worchestershire sauce
- 1/2 teaspoon Worchestershire sauce
- 1/4 cup fresh lime or lemon juice
- 1 cup extra virgin olive oil
- 2 tablespoons grated parmigiano reggiano

Step 1
Combine the garlic, anchovy filets, egg yolks, Dijon, pepper and worchestershire in the bowl of the food processor and blend until mixed. Add the lime juice and blend until pale yellow in colour and completely smooth.
Add the oil in a thin stream while processing. whirl in the cheese and transfer to a jar and refrigerate until ready to use.
This keeps in the fridge but it's at its very best the day it's made.
