Ingredients
- 8 medium onions, sliced
- 3/4 cup butter
- 10 cups brown stock (7 beef & 3 chicken bouillon cubes, dissolved in 10 cups boiling water)
- 1/4 tsp pepper
- 2 Tbsp sherry (optional)
- toasted rounds of bread
- grated or sliced mozzarella cheese

Preparation
Step 1
Sauté onions in butter until pale gold. Do not brown. Add them to hot stock. Add pepper and sherry. Heat. When ready to serve put soup in oven-proof soup dishes, top with a bread round. Cover with cheese. Brown under broiler; watch carefully. Makes about 8 servings, depending on size of soup dishes.
