Ingredients

  • 2 tsp olive oil
  • 1/2 pound ground beef - 95% lean
  • 1/2 pound ground turkey
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 1 cup chopped carrots
  • 1 cup cubed peeled potatoes
  • 1 cup chicken or beef broth (original recipe calls for water)
  • 1/2 cup uncooked long grain rice
  • 1 cup green beans*
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Preparation

Step 1

Warm the olive oil in a large skillet over medium heat. Add the onions and saute until they begin to brown; add the garlic. Add the beef and turkey, and cook until the meat is no longer pink; drain any accumulated fat. Stir in the carrots, potatoes, green beans, broth, and rice.

Cover and simmer for 30 minutes or until the rice and vegetables are tender. Just before serving, stir in the soy sauce, salt, and pepper.

Yield: 4 servings.

*If using frozen green beans, defrost under running, cool water and add during the last 5 minutes of cooking.
