Ingredients
- PIE CRUST:
- 9-10 graham crackers
- 1/4 cup butter, melted
- FILLING:
- 12 oz. cream cheese
- 2 eggs
- 3/4 cup sugar
- 2 tsp. vanilla
- TOPPING:
- 1 carton sour cream (8 oz. size)
- 3 Tb. sugar
- 1 tsp. vanilla

Step 1
Start with the crust by crushing the crackers (I use a blender to do this) and add the melted butter. Then press into a 9 inch pie plate. Bake at 350 degrees for 5 minutes.
Put all the filling ingredients into a medium size bowl and beat with an electric mixer until it's a creamy texture. Pour into the crust and bake at 350 degrees for 25 minutes and then let it cool in the fridge. Mix together the topping ingredients until smooth. Spread over the top of the cooled cheesecake. Return to the fridge to chill. You might want to add fruit topping to each slice before serving.
