Speedy Chicken Cacciatore

Ingredients

• 2 Tbsp vegetable oil
• 4 chicken drumsticks and thighs
• 1 medium onion, sliced
• 1 28 oz can tomatoes
• 1 tsp oregano
• 1/2 tsp minced garlic
• 1 tsp dried basil
• 1/4 tsp pepper
• 1 cup dry white wine or chicken broth
• 250 grams spaghetti, broken in half or thirds
• 1/4 cup grated Parmesan cheese

Preparation

Step 1

Heat oil in frying pan over med-high heat. Brown chicken on all sides with onion. Add tomatoes, seasonings, and wine or broth; bring to a boil. Stir in spaghetti. Cover and simmer over low heat, stirring occasionally, about 15 min or until spaghetti is tender. Sprinkle with cheese and cook 1 minute longer.
