Spicy Buffalo Wings
Super crispy skin, tender chicken, sticky, spicy, lip-smacking sauce-who can resist the classic Buffalo wing, especially when it's with a cool, chunky homemade blue cheese dressing.

- 2 lbs chicken wings
- oil for deep fat frying
- 1/3 cup mayonnaise
- 1/3 cup buttermilk or plain yogurt*
- 1/3 cup crumbled blue cheese
- 3 tbsp butter or margarine
- 2-4 tbsp hot pepper sauce
- 1 tbsp cider vinegar
- *Don't buy buttermilk or yogurt just for this sauce. Add 1 teaspoon vinegar or lemon juice to 1/3 cup milk. Let stand 1 minute and you'll have thickened milk that is a homemade recipe for buttermilk.

1. Pour oil into large heavy saucepan to depth of 1 1/2-inches. Over medium heat, bring oil to 375°F on cooking thermometer.
2. Meanwhile, cut off chick¬en wing tips and discard. Cut wings in half at joint; pat dry. Carefully place half of wings in hot oil and fry, gently stirring occasionally, until crisp and golden, about 9 minutes. With slotted spoon, transfer wings to wire rack set over baking sheet. Return oil to 375°F and cook remaining wings.
3. While first batch of chick¬en is cooking, in small bowl combine mayonnaise, butter¬milk and blue cheese.
4. While second batch of wings is cooking, in large skillet melt butter; stir in hot sauce and vinegar. Add fried wings; toss to coat. The longer wings are in sauce, the spicier they become. Serve wings with blue cheese dip.
