  • 3 medium baking potatoes, rubbed with olive oil and salted, baked and unpeeled, cut into 1/2-inch cubes
  • 2 cups shredded Cheddar cheese, divided
  • 6 eggs, well beaten
  • 1 1/2 cup small curd cottage cheese
  • 1/2 teaspoon salt
  • freshly ground black pepper
  • chopped parsley for garnish (optional)

Preheat the oven to 350 degrees F. Spray a 9 x 13-inch or a shallow 3-quart baking dish with cooking spray.

Place the ham, onion, potatoes, and 1 cup of cheese into a large mixing bowl. Place the eggs, cottage cheese, salt, and pepper into a food processor or blender and blend until well mixed. Pour the egg mixture over the chopped and shredded ingredients and toss to mix well. Pour the mixture into the prepared baking dish and top with the remaining 1 cup of cheese.

Bake the casserole for 40 to 45 minutes until the eggs are set in the center. Let stand for at least 10 minutes before serving. Garnish with chopped parsley if desired.
