Ingredients
- 3 cups apple juice
- Try: add 1/2 cup apple cider vinegar
- 1/2 cup brown sugar
- 1 tbsp. prepared mustard
- 1 - 3 lb. corned beef brisket (pointe), with spice packet
- 20 small red potatoes, scrubbed
- 4 carrots
- 2 onions, cut into 8 wedges

Step 1
In a cast iron Dutch oven, pour apple juice, brown sugar and mustard. Mix until sugar has dissolved. Lay brisket in mixture and rub spice mix on top. Add more apple juice if needed to cover corned beef. Cover and place in 200 degree oven for two hours. Put veggies in Dutch oven and cook for 4 hours longer.
