Ingredients

  • 1 Tblsp. olive oil
  • 2 Tblsp. butter
  • 2 lbs. ground chicken (could use shredded chicken)
  • 1 chopped carrot
  • 1 chopped onion
  • 3 chopped celery stalks
  • 5 cloves chopped garlic
  • 1 Tblsp. paprika
  • 1 bay leaf
  • salt and pepper
  • 2 C. chicken stock
  • 1/2 C. hot sauce
  • 1 - 15 oz. can tomato sauce
  • 1- 15 oz. can crushed tomatoes
  • Corn chips

Preparation

Step 1

Preheat oven to 375 degrees.

Heat olive oil and butter in a large pot over medium heat. Add ground chicken and break up into small pieces. Brown about 5 minutes.
Add carrot, onion, celery, garlic, paprika, bay leaf, salt and pepper.
Cook, stirring frequently for about 4 minutes. Add chicken stock, scraping up brown bits from bottom of pan.
Add hot sauce, tomato sauce and crushed tomatoes.
Bring to a bubble and simmer 10 minutes or until desired consistency.
Top with crumbled corn chips
