Chocolate Tofu Cake

Ingredients

• 2 trays (300g) Pete's Caramel Dessert Tofu
• 1/3 cup water
• 1/2 cup butter
• 1/2 cup brown sugar
• 1 tsp vanilla extract
• 1 1/2 cups flour
• 1/3 cup dark cocoa powder
• 1 tbsp baking powder
• 1 tsp baking soda
• 1/2 cup chocolate chips

Preparation

Step 1

9" pan 30-35 minutes at 350

If you want a moister cake increase the water to 1/2 or 2/3.

Puree tofu and water in blender. Cream butter and sugar together in mid size bowl. Add vanilla and tofu. Set aside.
In another bowl sift together remaining ingredients except choc chips.
Pour tofu mixture into flour mixture and stir until blended. Do not over mix.
Gently stir chocolate chips into cake mix. Pour mixture into pan
Cool the cake in the pan.
