Peach/Strawberry muffins

Ingredients

• Topping:
• 1/3 cup brown sugar
• 1/6 cup flour
• 1/8 cup butter
• Muffins:
• 1 1/2 cups flour
• 1/2 cup sugar
• 3 tsp baking powder
• 1/4 tsp salt
• 1 egg
• 1/2 cup milk
• 1/4 cup oil
• 1 cup peaches or strawberries, diced

Preparation

Step 1

Stir together topping ingredients. Set aside. Stir together flour, baking powder, sugar and salt. In another bowl mix egg, milk and oil. Add to dry ingredients along with fruit. Mix until just blended. Fill muffin cups and top with topping. bake for 20-25 min at 400°F.
