  • 3 tbs butter
  • 4 c. fresh mushrooms, sliced
  • 1 med onion, chopped
  • 1 med carrot, diced
  • 4 c. chicken broth
  • 4 c. fresh broccoli florets, sm pieces
  • 6 tbs flour
  • Salt & pepper to taste
  • 3 c. evaporated skim milk
  • 2 c. frozen corn
  • 1 c. diced cooked chicken

Step 1

Melt butter in stock pot. Add onion, mushrooms, carrots and cook until tender. While this cooks bring broth to a boil and add broccoli. Boil for one minute Sprinkle mushroom mixture with flour, salt and pepper, stirring gentle to mix. Add milk all at once, stirring until thickened. Cook for one minute. Stir in broccoli and chicken broth, corn and chicken. Heat through and serve.
