  • 12 large strawberries (with stem if available) dry and at room temperature
  • 1 lb. bittersweet chocolate
  • (preferably 60 or higher), cut into pieces
  • 1/2 lb white chocolate, cut into pieces

Step 1

Place the semisweet and white chocolate pieces into two separate
stainless steel mixing bowls. Place the mixing bowls into a large saute
pan with water over medium heat and bring to a simmer. When the
chocolate is melted, stir until smooth and remove the bowls from the
heat. Can do in microwave or stock pot. add tspn grapeseed oil or vegetable oil to thin out if necessary.

Line a cookie tray with parchment or wax paper. Holding the strawberry
by the stem, carefully dip the fruit into the dark chocolate, lift and twist and swirl slightly, letting any excess chocolate fall back into the bowl. Place on the parchment paper. Repeat with the rest of the strawberries. Dip a fork (or a butter knife is better) in the white chocolate and drizzle the white chocolate over the strawberries. Cool at least 15 to 20 minutes before serving.
