Ingredients
- 1 3/4 cups flour
- 2/3 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup mashed ripe banana (2-3 medium bananas)
- 1/3 c. softened butter
- 1 tbsp. milk
- 2 eggs
- 1/4 c. chopped nuts

Step 1
Preheat oven to 350 degrees. In a large mixer bowl combine 1 cup of the flour, sugar, baking powder, baking soda and salt. Add mashed banana; softened butter and milk. Beat with an electric mixer on low speed til blended, then on high speed for 2 minutes. Add eggs and remaining flour, beat til blended. Stir in nuts.
Pour batter into a greased 8 x 4 x 2 inch loaf pan. Bake at 350 degrees for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove from pan; cool thoroughly on a wire rack. Wrap and store overnight before slicing.
