Ingredients

  • 1 tablespoon unsalted butter
  • 1 pound boneless skinless chicken breast meat, cut into 1-inch pieces
  • 3 cloves garlic, pressed
  • 1 large sweet onion, sliced
  • 8 mushrooms, sliced
  • 1 (6-oz.) jar marinated artichoke hearts, drained and chopped
  • 9 ounces Angel Hair pasta
  • 1 tablespoon Dijon mustard
  • 1/3 cup white wine (or use white grape juice/cider vinegar)
  • 1/2 cup light sour cream

Preparation

Step 1

Melt the butter in a skillet over medium-high heat; add garlic and chicken and cook for 1 to 2 minutes. Add onion slices and cook for 1 minute longer. Add mushroom slices and artichokes and continue to cook until chicken pieces are no longer pink. Remove pan from heat and reduce heat to low. At this point, go ahead and throw your pasta on to cook. Add Dijon mustard and wine to chicken mixture. Place pan back on burner and gently stir in sour cream until sauce forms; spoon chicken and sauce over cooked and drained pasta.

SERVING SUGGESTION: Serve steamed asparagus on the side.
GLUTEN FREE: Make sure artichoke hearts and pasta are gluten free.
