Ingredients

  • 2 cups flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chopped dried apricots
  • 1 cup raisins
  • 1/2 cup chopped pecans
  • 1 Tbsp grated orange rind
  • 2 eggs
  • 1/4 cup oil
  • 1 cup orange juice

Preparation

Step 1

Mix flour, sugar, baking powder, and salt. Add apricots, raisins, pecans and orange rind. Mix wet ingredients together and add all at once to the dry. Mix only until just combined. Place in loaf pan. Bake at 350°F for 1 hour. Let stand 10 min, then turn out. Wrap and let stand overnight before cutting.
