Basic White Bread For the ZO 1 1/2 pound loaf -- 2pts 1 Picture

Ingredients

  • 1 cup water
  • 3 1/4 cups bread flour, (13.8 ounces by weight)
  • 3 Tablespoons sugar
  • 1 1/2 Tablespoons dry milk
  • 1 1/2 teaspoons salt
  • 2 Tablespoons butter
  • 1 1/2 teaspoons active dry yeast

Preparation

In the Bread Maker:
Put water in bread machine.
Mix all dry ingredients (except yeast) then pour gently on top of water
Push butter pieces into flour around the sides.
Make a little well in the flour to put yeast.
Don't let yeast touch liquid ingredients.
Start Bread machine on Basic setting


OR
You can put the dough in the machine as above but use the dough cycle. When finished, punch dough down and cut dough in half, cover with the mixing bowl, and let stand for 15 minutes longer. Roll each half into a 12x9-inch rectangle. Starting with the narrow edge, roll up, turning ends under to make loaves to fit pans. Place rolls seam side down in greased loaf pans, 9x5x3-inches. Cover pans with clean towel and let rise in warm place until double, about 45 minutes. When the dough is risen up enough, bake the loaves at 350° for 40 minutes.

OR
You can use your Kitchen Aid Mixer with Dough hooks
Measure the warm water into my Kitchen aid Mixing Bowl. I mix the dry ingredients in a bowl. I then add the dry ingredients over the water in the bowl. I then push pieces of the softened shortening in. Then with a dough hook, I mix and knead with the Kitchen Aid mixer on speed 1 to mix and then speed 2, for a total of 5 minutes. Then I turn dough out into another greased bowl for the first rising and let rise for about 1 hour in a warm place, free of drafts. Punch dough down and cut dough in half, cover with the mixing bowl, and let stand for 15 minutes longer. Roll each half into a 12x9-inch rectangle. Starting with the narrow edge, roll up, turning ends under to make loaves to fit pans. Place rolls seam side down in greased loaf pans, 9x5x3-inches. Cover pans with clean towel and let rise in warm place until double, about 45 minutes. When the dough is risen up enough, bake the loaves at 350° for 40 minutes.


You can tell the dough is done if you turn it out of the pan and thump the bottom with your finger. It should make a dull hollow sound. If it doesn't sound hollow, put it back into the pan and cook it some more. Makes Two loaves.

The flour should be 13.8 ounces by weight.
