Ingredients

  • 1 (1 pound) package of sliced bacon
  • 2 (8 ounce) packages diced cooked ham, drained
  • 1 (10 ounce) package frozen chopped onion, thawed and drained- I use fresh
  • 2 ( 1 pound, 8 ounce) loaves sliced white bread, crusts removed, divided
  • 2 (16 ounce) cans refried beans
  • 1 (8 ounce) package shredded sharp cheddar cheese, divided
  • 8 large eggs, lightly beaten
  • 2 1/2 cups whole milk
  • 1 tsp. garlic hear seasoning blend (I used garlic salt)
  • 1 (8 ounce) package of montery jack cheese
  • garnish of avocado slices, salsa, chopped green onion

Step 1

1. Spray a 9 x 13 baking pan with nonstick cooking spray; set aside
2. in a large nonstick skillet, cook bacon, in batches, over medium-high heat until crisp; remove bacon and drain on paper towels, reserving 1 Tbsp. drippings in skillet. Crumble bacon. Cook ham and onion in hot drippings over medium heat, stirring often, until onion is tender, about 5 minutes. Remove from heat. Stir in bacon. Stack half of bread slices, in 2 layers, in prepared baking dish, trimming to fit, if necessary. Spread beans evenly over top layer of bread. Top with ham mixture adn Cheddar cheese.
3. In a medium bowl, whisk together eggs, milk, and seasoning blend; pour half of mixture over layered ingredients. Repeat bread layers, trimming to fit if necessary. Pour remaining egg mixture over bread. Cover with plastic wrap, and refrigerate overnight. Remove from refrigerator and let stand for 30 minutes before baking.
4. Preheat oven to 350 degrees. Bake uncovered for 1 hour. Remove from oven, and sprinkle with Monterey Jack cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before serving. Garnish with fresh avocado slices, chunky salsa, and chopped green onion, if desired. Store covered in refrigerator for up to 3 days
