Ingredients

  • 2 tsp. Knox gelatine
  • 3 T. water
  • 6 T. sugar
  • 3 T. flour
  • 1/4 tsp. salt
  • 1 1/8 c. milk
  • 1/2 tsp. vanilla
  • 1/4 tsp. almond extract
  • 1/3 c. whipping cream
  • 2 lg. egg whites
  • 1/4 tsp. cream of tarter
  • 6 T. sugar
  • 3/4 c. coconut

Preparation

Step 1

Soften gelatin in water. Set aside. Mix 6 tablespoons sugar, flour, salt and milk in small saucepan. Stir over low heat until boiling, then boil for 1 minute. Remove from heat; add gelatine. Let cool. When partially set, beat with rotary beater until smooth. Blend in vanilla and almond. Fold in cream, whipped to stand in peaks. Make a meringue of the egg whites, cream of tarter and 6 tablespoons of sugar. Fold into whipped cream mixture. Fold in coconut. Pile into 9-inch baked pie shell. Sprinkle generously with coconut. Chill at least 2 hours before serving.
