African Nut Stew

This doesn't sound like much but it is so good, the flavors blend together excellently. A favorite of My husband, son and I.

Ingredients
- 3 Tbsp soy sauce
- 1 onion, sliced
- 2 cups sweet potatos, cubed 1"
- 1 carrot, sliced
- 1 celery stalk, sliced
- 3 cups vegetable stock*
- 1 15-oz can garbanzo beans
- 1 15-oz can crushed tomatoes
- 1/2 cup fresh cilantro, chopped
- 1/3 cup natural peanut butter
- 2 tsp curry powder
- 1 red bell pepper, diced
- Peanuts

Preparation
Step 1
Heat 1/2 cup of water and the soy sauce in a large pot. Add onion and sweet potato. Cook over high heat, stirring occasionally, for 5 minutes. Add carrot and celery. Cover and cook 5 minutes, stirring occasionally. Add tomatoes, stock*, garbanzo beans, and cilantro. Blend peanut butter with 1/3 cup of water, then add it to the stew along with the curry powder. Stir, then cover and simmer 10 minutes. Serve with red peppers and peanuts as toppers.
*or less depending on how thick you prefer it.
This freezes well.
