Spiced rubbed Pork Chops with Peach Salsa

Ingredients
- Peach Salsa:
- 2 1/2 cups Diced Peaches
- 3/4 cup Finely Diced Red Onion
- 1/2 cup Diced Green Bell Pepper
- 1/2 cup Diced Red Bell Pepper
- 1/2 tsp Serrano or Jalapeno Pepper, seeded and diced
- 2 Tbsp Lime Juice
- 1 Tbsp Sugar
- 2 tsp Honey
- 1 Tbsp Chopped Cilantro
- Spice Rubbed Pork Chops:
- 2 Bone In Pork Chops
- 1 1/2 Tbsp Brown Sugar
- 1 1/2 tsp Cumin
- 1 1/2 tsp Chipotle Chili Powder
- 1 tsp Paprika
- 1/2 tsp Salt
- 1/4 tsp Cayenne Pepper
- 1/4 tsp Pepper

Step 1
Salsa:
In a large nonreactive mixing bowl, combine all ingredients. Chill at least 15 minutes before serving.
Pork Chops:
Place all spices in a mixing bowl and combine thoroughly. Sprinkle spice mixture generously over room temerature pork chops and rub chops until fully covered. Preheat grill to medium heat, 350-400 degrees. Place pork chops on grill, cooking about 5 minutes on one side. Flip and continue cooking on opposite side about 5 more minutes for medium rare. Remove from grill and cover with foil then let rest 5-10 minutes. Serve with peach salsa.
