Ingredients

  • 2 prepared refrigerated pie crusts
  • 1 cup brown sugar
  • 1 egg
  • 1/2 TBS butter
  • 1/2 tsp vanilla extract
  • 1 TBS hot water
  • 1/2 cup flaked coconut
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Preheat oven to 350'

Cut 12 shells from unrolled pie crust, place shells in greased muffin or tart pan.

Toast chopped walnuts and flaked coconut for 5-10 mins or until lightly toasted. Remove from oven and cool.

Turn oven up to 450'

Put 10 raisins in the bottom of each tart shell.

Whisk together sugar, egg, butter, vanilla and hot water. Add coconut and walnuts. Pour mixture into tart shells evenly, filling no more than 2/3 full.

Bake at 450 for 10-12 mins or until golden brown

Allow to cool before removing from pan.
