APPLE SAUSAGE PUFF PANCAKE

Ingredients
- For the Pancake:
- 6 SERVINGS
- 1 1/2 cups all purpose-flour
- 6 tablespoons sugar
- 3/4 teaspoon salt
- 1 1/2 cups milk
- 6 eggs
- 6 tablespoons margarine or butter
- For the Filling:
- 3 medium apples, such as Granny Smith, thinly sliced
- 1/2 cup packed brown sugar
- 1/3 cup margarine or butter
- 1/2 cup maple syrup
- 1 pound bulk maple flavored sausage

Preparation
Step 1
FOR THE PANCAKES:
Preheat oven to 425 degrees F.
In medium bowl, combine all ingredients except margarine. Beat until smooth.
Place 1 tablespoon of margarine into six 2-cup ramekins, and heat in preheated oven until margarine is melted.
Carefully pour batter into hot ramekins. Bake for 14-18 minutes, or until puffed and golden brown.
FOR THE FILLING:
While the pancakes are baking, cook sausage; drain and set aside.
Melt margarine in a pan; add brown sugar, syrup and apples. Sauté until apples are tender, but not soggy. Add sausage and heat through.
Scoop filling into middle of each baked puffed pancake. Serve Immediately, they fall quickly.
