PUMPKIN BREAD

Great tasting, especially nice for the holidays. Makes 3 small loaves, or 2 large.

Ingredients
- 3 cups granulated sugar
- 1 cup cooking oil
- 4 eggs
- 3 1/3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2/3 cup water
- 1 16 oz can pumpkin

Step 1
1. Grease three 8 x 4 x 2 inch or two 9 x 5 x 3 inch loaf pans, set aside.
2. In a large mixing bowl, beat together sugar and oil using an electric mixer on medium speed. Add eggs and beat well; set aside.
3. In a bowl, combine flour, soda, salt, cinnamon, and nutmeg.
4. Add dry ingredients and water alternately to sugar mixture, beating on low speed after each addition just until combined. Beat in pumpkin.
5. Pour batter into prepared pans. Bake in a 35o degree oven 50 minutes for smaller pans, (55 for larger) or until done. Cool in pans 10 minutes. Remove from pans; cool.
6. Cover, store at room temperature up to 3 days or chill up to 1 week.
