Ingredients

  • 1 cup brown sugar
  • 1/2 lb butter
  • 4 eggs
  • 1/4 lb mixed peel
  • 1/4 lb dates
  • 1 lb currants
  • 2 lb raisins
  • 1/4 lb cherries
  • 1/4 lb pineapple
  • 1/2 cup walnuts(2 oz)
  • 1 tsp mixed spice
  • 2 tsp cinnamon
  • 1/2 tsp cloves
  • 1 tsp soda
  • 2 cups flour
  • 1/2 cup strong coffee
  • juice of 1 lemon and 1 orange
  • 1/4 cup rum(optional)

Step 1

Cream butter and brown sugar. Add 4 eggs. Mix flour, spice and fruit and add alternately with the liquids. Bake at 275-300°F for 4 hours. Mine always takes longer.
