Ingredients

  • 1 1/2 cups unblanched almonds(12 oz)
  • 1 1/2 cups pecan pieces(8 oz)
  • 1 cup quartered dates
  • 1 cup halved glace cherries
  • 1 cup candied orange peel(or mixed peel)
  • 1/2 cup raisins
  • 3/4 cup flour
  • 3/4 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 eggs
  • 1 Tbsp marachino cherry juice
  • 1 tsp almond extract

Preparation

Step 1

Combine all fruit and nuts. Toss with dry ingredients. Beat eggs util thick and lemon colored, about 5 min, on medium speed. Stir in juice and extract. Pour over fruit and nuts, mix well. Spoon into 2- 7 1/2" x 3 1/2" pans and press down. Bake at 325 for 1 - 1 1/4 hours. Cool in pan a few min then turn out and cool. Wrap for 2-3 days before eating.
