Ingredients

  • 6 baking potatoes
  • 1/2 lb. shrimp or 5 slices bacon, cooked crisp
  • 1 stick of butter, room temperature
  • 1 cup sour cream
  • Salt and pepper
  • 1/2 cup grated cheddar
  • 1/2 cup grated mozzarella
  • Paprika

Preparation

Step 1

1. Bake potatoes at 400 degrees F. for 1 hour. Ensure you poke holes in the potatoes to let the steam escape. Remove from oven and let cool slightly. Keep oven on for the final step.
2. When potatoes are cool enough to handle, slice each potato in half, lengthwise, and scoop out the flesh. Reserve the flesh in a bowl and set the potato skins aside.
3. Fry the bacon or shrimp and chop up.
4. Whip the potato and butter using a handheld or stand mixer. Add the sour cream, salt and pepper, and mix.
5. Add the cheeses and stir by hand. Fold in the shrimp or bacon.
6. Stuff the potato skins with the mixture and sprinkle the tops with paprika.
7. Bake until gooey and lightly browned.
