Ingredients

  • 12 large shrimp
  • 1/2 cup olive oil
  • 1 medium onion finely sliced
  • Salt and pepper
  • 3/4 cup crumbled Feta cheese
  • 1 lb. fresh tomatoes, peeled, seeded and thinly sliced
  • 1 tbsp. chopped garlic
  • 1 tbsp. fresh oregano
  • 1 cup dry white wine

Preparation

Step 1

1. Preheat oven to 400 degrees F. Rinse shrimp in cold water and drain. Season with salt and pepper. Place shrimp in an oven-proof baking dish.
2. In a saute pan, heat olive oil over medium heat. Add onions and season with salt and pepper. Saute until translucent.
3. Add tomatoes, garlic and herbs. Saute for 1 minute.
4. Add wine and bring liquid to a boil. Reduce to simmer and cook for 2 minutes.
5. Pour mixture over shrimp. Sprinkle the top with the feta cheese.
6. Bake for 8-10 minutes. Serve over white, cooked rice.
