Ingredients

  • 4 boneless skinless chicken breast halves (6 oz. each)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 cup apricot preserves
  • 1/4 cup reduced sodium chicken broth
  • 1 tbsp. honey mustard
  • 1/4 cup sliced almonds

Step 1

Sprinkle chicken with salt and pepper. Place in a 13 in. x 9 in. baking dish coated with cooking spray. Bake uncovered at 350 degrees for 15 minutes.

In a small bowl, combine the preserves, broth and mustard. Pour over chicken; sprinkle with almonds. Bake 15-20 minutes longer or until chicken juices run clear.
