Ingredients
- 1/4 c. butter or olea
- 1/4 c. flour
- 1 (14 1/2-oz) can evaporated milk
- 1 c. chicken broth
- 1/2 c. water
- 3 c. long-grain rice, cooked
- 2 1/2 c. cooked chicken, diced
- 1 (3-oz) can sliced mushrooms, drained
- 1/3 c. green pepper, chopped
- 1/4 c. canned pimientos, chopped
- 1 1/2 tsp. salt

Step 1
Preheat oven to 350. In saucepan, melt butter or oleo and add flour; blend. Add milk, chicken broth and water and cook until mixture thickens. Add rice, chicken, mushrooms, green pepper, pimiento and salt. Pour into greased 2-quart casserole. Bake, uncovered, for 40 minutes until heated through. Can top with 1/4 cup toasted slivered almonds.
