Ingredients

  • 1 lb. ground beef
  • 1/4 c. shortening
  • 2 c. diced fresh tomatoes
  • 1 c. diced cooked potatoes
  • 1/2 tsp. minced fresh onion
  • 1 1/2 tsp chili powder
  • 1 tsp. salt
  • 1/8 tsp. black pepper
  • 4 lg. sweet peppers
  • 1/4 c. buttered bread crumbs

Preparation

Step 1

Saute beef in shortening. Add tomatoes and cook for 5 minutes. Remove from heat. Stir in potates, onion, chili powder, salt and pepper. In the meantime, cut off the top of peppers. Remove seed and parboil in boiling water for 5 minutes. Drain. Fill with mean mixture and top with buttered crumbs. Put into greased baking dish and bake for 35 minutes or until crumbs are brown in 475 oven.
